Try this healthy cookies recipe for your family. Even though these are a “sweet treat”, they have some redeeming nutritional value. The coconut shreds and oil contain nutrients, like lauric acid and myristic acid, that help fight unfriendly bacteria, virus, fungi and yeast germs. And the anti-oxidant content of the raw cacao powder fights free radicals. It’s still a good idea to limit the number of cookies you eat to keep your blood sugar levels normal. However, they are a healthier way to satisfy your sweet tooth and chocolate cravings.
Mix dry ingredients:
1 cup shredded coconut
1/4 cup almond flour
1/4 cup raw cacao powder
1/8th teaspoon Real Salt
Then add 3/8 cup maple syrup
1/2 teaspoon vanilla extract
1/4 cup coconut oil (warmed in glass jar in pan of hot water to liquefy)
Mix thoroughly. Press into silicone molds lightly greased with olive oil.
Place in freezer until firm. Pop out of molds immediately and store in glass jar in refrigerator.
Betcha these healthy cookies won’t last long at your house.
Flavor variety ideas:
Instead of cacao powder use:
- Lemon zest
- Dried strawberries, apricots, blue berries
- Dates
Enjoy your cookin’
