Golden Potato Soup

4 medium potatoes, peeled and diced
1 medium onion, chopped
2 medium carrots, chopped
2 cups organic chicken broth
½ teaspoon sea salt
Combine all ingredients in a pot. Cover, bring to boil and simmer for 20 minutes or until potatoes and carrots are soft.
Transfer to food processor and puree. Your tasty potato soup is ready to eat.
Notes:
We like thick soup. If you prefer it thinner, add rice milk or coconut milk and simmer again until it’s warm.
Undoubtedly the type of chicken broth you use makes a big difference to the taste. In this instance I used Kirkland Organic Chicken Broth (Costco). Homemade chicken broth would taste great too. I’m so thankful for the availability of organic chicken broth. In the past most commercially made chicken or vegetable broths or bullion contained unacceptable ingredients.
